A relish mainly consists of chopped vegetables that are flavoured with vinegar, salt, sugar, and spices to create a savoury, sweet tasting flavoured sauce served to complement a variety of foods.
I believe a good homemade burger is not complete without a relish, so forget ketchup and shop bought relishes and knock up a batch of this Bloody Mary Relish and give your burgers a lift.
1 red onion, finely chopped
2 stalks of celery, finely chopped
2 cloves garlic, finely grated
2 tablespoons of extra virgin olive oil
1 large can of chopped tomatoes
2 tablespoons of caster sugar
The juice of ½ lemon
1 tablespoon of Worcestershire sauce
1 teaspoon of Tabasco sauce
75ml of cider vinegar
1 teaspoon of dill seed
1 teaspoon of mustard seed
1 teaspoon of sea salt
A few grinds of freshly ground black pepper
A small splash of dry sherry
Gently cook the onion, celery and garlic in the olive oil until opaque and soft.
Add the remaining ingredients, apart from the sherry, and bring to a gentle simmer.
Cook with the lid on for about 20 minutes and then with the lid off for about 20 minutes until it has thickened to a sauce.
Stir in the sherry and serve warm or cool and place in a sterilised jar. It will last a week in the fridge so you can prepare the relish well in advance.
