My BBQ Steak Dry Rub Marinade.

This rub combines the flavours of sweet and heat. You can adjust the heat by using mild or medium chilli powder. If you really want to make spice it up, then add an extra tablespoon of cayenne. This is a perfect rub for great BBQ steak.


3 tablespoons of paprika
3 tablespoons of mild or medium chilli powder
3 tablespoons of brown sugar
3 tablespoons of ground black pepper
1 tablespoon of cayenne
1 tablespoon of garlic powder
1 tablespoon Maldon Smoked Sea Salt
1 heaped teaspoon of ground cumin
1 tablespoon of ground coriander
1 tablespoon of dried oregano


Mix all of the ingredients together well and sprinkle liberally on both sides of the steak. Rub into the flesh well and press down firmly to ensure all of the meat is covered.

Leave to marinate in a fridge uncovered for a minimum of two hours before cooking. For best results, leave overnight.

Any remanning rub will keep for 3 months in an airtight container.
