Tapas are a wide variety of appetizers, or snacks, in Spanish cuisine. They may be cold (such as mixed olives and cheese) or hot such as in this recipe for chilli and garlic king prawns. In select bars in Spain, tapas have evolved into an entire, and sometimes sophisticated, cuisine. This is a quick and simple 10 minute dish.
This recipe will serve 4 portions.
4 tablespoons of extra virgin olive oil
1 tablespoon of salted butter
6 garlic cloves, finely grated
1 heaped teaspoon of chili flakes
1 tablespoon of dry sherry
350g of fresh peeled and de-veined king prawns
1 large pinch of sea salt
1 large pinch of freshly ground black pepper
Heat the oil and butter in a frying pan over a medium heat.
Add the garlic and chilli, and cook gently for 2 minutes.
Add the sherry and prawns, turn up the heat, and cook, stirring occasionally, for 5 minutes, or until the juices have reduced by half.
Season with salt and black pepper and serve with fresh crusty bread and a crisp salad.
