450g/1lb of lamb mince
1 small onion, peeled and finely grated
2 small garlic cloves, peeled and finely chopped
1 x 2.5cm/1inch piece fresh root ginger, peeled and finely chopped
1 small hot Indian green chilli finely chopped (leave the seeds in)
1 teaspoon of sea salt
A few twists of freshly ground black pepper
2 teaspoons of garam masala
1 teaspoon of cumin powder
1/2 teaspoon of Turmeric powder
2 tablespoons of freshly chopped coriander
In a large bowl mix all the burger ingredients together.
Using slightly damp hands shape the mixture into four burgers.
Cover and chill for 20 minutes.
Cook the burgers under a preheated moderate grill,min a frying pan or on a prepared BBQ for 6-8 minutes on each side until thoroughly cooked and the meat juices run clear.
Serve the burgers with a spoonful of relish, a few spinach leaves and why not try mini naan breads instead of burger buns for a change. You can of course use bread rolls of your choice.
